Celebrate the festive season with LARK Christmas Cask No.125 2026 Limited Edition Single Malt Whisky, the eighth annual release in LARK Distillery’s highly anticipated Christmas Cask series. Bringing together three iconic Tasmanian names — LARK, award-winning winery Frogmore Creek and Hobart patisserie Jean-Pascal — this distinctive whisky captures the rich, indulgent flavours of Christmas in every pour. 

Matured in Port and Sherry casks before being finished in Frogmore Creek red wine barrels seasoned with Jean-Pascal’s fruit mince pie jus, this innovative release delivers an unmistakably festive flavour profile. Expect rich Christmas pudding character, warming spices, sweet caramel and luscious fruit notes, creating a memorable whisky for special occasions, festive gatherings and premium gifting.

A Unique Tasmanian Collaboration

The Christmas Cask tradition began with an inventive idea: giving surplus fruit mince pie ingredients a second life by using the jus to season red wine barrels. Those barrels are then used to finish LARK single malt whisky, creating a distinctive expression that celebrates local craftsmanship, creativity and the spirit of Christmas. 

Tasting Notes

  • Nose: Plum pudding, brandy butter, mulled-wine spices and hints of gingerbread.

  • Palate: Buttery coconut shortbread and baked custard, developing into spiced apple and rich caramel sauce.

  • Finish: Long and indulgent, with candied walnut and lingering orange cream.
