Lark Ruby Abyss No. 285 Tasmanian Single Malt Whisky is a luxurious and deeply complex expression that sits at the pinnacle of the distillery’s Signature range. Crafted in Tasmania and matured entirely in first-fill Seppeltsfield Port and Sherry casks—including parcels drawn from rare 100-year-old Australian Port reserves—this whisky delivers remarkable richness, depth and balance. Every element has been carefully composed to create an indulgent yet refined spirit that showcases the artistry of modern Australian whisky-making.

The nose opens with an opulent wave of dark fruits, stewed plums and raisins, layered with caramelised brown sugar and subtle toasted nut notes. On the palate, it is full-bodied and velvety, revealing flavours of plum compote, blackberry, chocolate and silky mocha, complemented by buttery pastry richness and a delicate thread of Tasmanian peat smoke. The finish is long and warming, carrying lingering notes of spiced treacle, candied quince and fortified oak, leaving a lasting impression of depth and elegance.
