The Philosophy is designed to have distinct power, yet refined elegance. We achieve this by sourcing wines from regions that have slightly different attributes that add to the depth and complexity of the wine. The Cabernet was sourced from the region of Wrattonbully to further enhance the aromas, flavour and elegance of the wine. The Shiraz grapes were obtained from the Clare Valley to achieve the intense fruit flavours and sweet spice characters that Shiraz is known for. The fruits for this wine were picked in the cool of the nightand transported to the wineryin order to retain freshness.After being destemmed, thefruit pressings are fermented in 7 tonne openvatfermenters fora minimum of10 days. Once fermentation is complete the wine is transferred to new and oldFrench oak barrels for 24 months to mature before bottling. The wine isthen cellaredfor a further two years to continue to develop before release. Thiswinecontains 62% Cabernet grapes and 38% Shiraz grapes which gives it remarkable complexity.
